This is Cheryl Strasser. She is a graduate and one of my favorite students of all time. She is a pastry cook at the Windsor Court Pastry shop. She enjoys florentine cookies.
She designed this wedding cake the day we were there. It is all basketweave.

Cheryl makes her own sourdough breads. Here is her starter. She keeps it in a pancake batter state in a garbage can.
Decorative breads are very important around the holidays. Here is a rolling cart full of them with some pumpkins.
A deck oven is invaluable in the bakeshop. Here are three. Notice the green buttons. They are for injecting steam. The oven temperature is computer controlled.
These are small chocolates that are given after dinner with some truffles. Each log is cut into 1/2" pieces.
